We rarely never say no to happy hour. Here are some of the concoctions we use to toast another day in paradise (or drown our sorrows after fixing a head).
Rum Punch
- Ice
- Rum
- Juice of half a lemon or lime
- Heavy splash of juice or soda (or both)
- Our faves include: Sprite or Ginger Ale, pineapple juice, and cranberry juice
- Seltzer water to the top of the glass

Painkiller
Shake together vigorously:
- Ice
- Rum
- Splash of coconut milk (though sweetened coconut creamer is to die for, if you have it)
- Juice of half a lemon or lime
- Heavy splash of pineapple juice
- Nutmeg
Pour into your glass and top with a splash of seltzer water (or Sprite-type soda if you want it sweeter). Give a stir (the drink will (froth a little) and top with more nutmeg. Feeling fancy? Add a pineapple spear.
Margarita
- Ice
- Tequila
- Juice of 1 lime
- Seltzer water
- (Add a splash of Sprite or OJ for a little extra sweetness)
Other ways we mix it up onboard:
Muddle in a few slices of jalapeño Use a flavored seltzer option Add a splash of any juice we have on hand

Out of rum? Vodka subs for just about anything. We’re not picky.
Booze-free option? Skip Step 2.
Hudson’s Homemade Ginger Beer
- Peel a chunk of fresh ginger root
- Mash/Muddle and toss in a saucepan with a cup of water and a cup of white sugar
- Boil (and stir) until sugar is completely dissolved
- Add a shot of your ginger simple syrup and a squeeze of lemon to seltzer water for a homemade ginger beer (of sorts)
- Keep leftover simple syrup in the fridge
- (This is also delicious added to cocktails. Don’t tell Hudson)
