It became apparent very early on in our cruising life, that buying our favorite salad dressings and marinades would no longer be a viable option.
Here’s a handful of our easy go-to concoctions onboard:
Salad Dressing
1 part olive oil 1 part apple cider vinegar Tablespoon or two of dried Italian herbs Tablespoon or two of sugar (or honey) heavy dousing of garlic powder half-as-heavy dousing of onion powder dash of salt (taste and adjust as needed) Want to mix it up? -Try a different vinegar (rice, white wine, champagne vinegars are all fun) -Add a tablespoon of your favorite dijon or sweet and spicy mustard -Try a different dried herb combo (dill is a fun one with mustard)
Barbecue Dry(ish) Rub
This works great for chicken, pork, potatoes, even cabbage. About equal parts brown sugar and chili powder Cumin to taste Garlic powder to taste Onion powder to taste Salt to taste Olive oil (removes the "dry" portion of this, but boy does it up the deliciousness factor. Take it or leave it!) You can also add dashes of paprika, cayenne, and or red chili flakes if you like a little heat.
Teriyaki/Soyaki/Stir Fry
We put add this to just about anything: potatoes, rice, veggies, meat, noodles... Use as a dressing, a sauce, or a marinade. It's an easy crowd-pleasing flavor that can make whatever you're eating taste like in belongs in a Chinese food to-go carton with wooden pull-apart chopsticks. Stir or shake together: 2 parts soy sauce 2 parts olive oil 1/2 part sesame oil some ground (or fresh) ginger some ground (or fresh) garlic sugar or honey to taste Ta da!
Curry
Curry is another fave. We make a coconut curry sauce and simmer anything we have in it. -Yellow or red curry powder -Garlic powder -Onion powder -Salt -Coconut milk (fresh if we happen to be so lucky, or powdered, or canned -- all work equally well (though the cool-factor of pouring it straight out of a real coconut is hard to top)) One of our go-to "pantry" curries: -Can of peas (drained) -Can of baby corn (half-drained) -2 cans of chicken (like tuna, but chicken, drained) -Sautéed yellow onion -White rice
