Without access to a host of pre-made seasonings and mixes like we had at our fingertips in the States, we’ve developed a handful of go-tos from our spice bins.
Make it Taste Like a Taco!
Seriously. What isn't delicious in taco-form? Here's our easy list to make it so: -Chili powder -Cumin -Garlic powder -Onion powder -Salt Sometimes, we also add: -paprika and/or cayenne -Oregano BOOM. Tastes like a taco. Use this as a dry rub, to season ground meat or tofu or veggies, add to rice as it cooks
Curry For All the Days
Curry is another fave. We make a coconut curry sauce and simmer anything we have in it. -Yellow or red curry powder -Garlic powder -Onion powder -Salt -Coconut milk (fresh if we happen to be so lucky, or powdered, or canned -- all work equally well (though the cool-factor of pouring it straight out of a real coconut is hard to top)) One of our go-to "pantry" curries: -Can of peas (drained) -Can of baby corn (half-drained) -2 cans of chicken (like tuna, but chicken, drained) -Sautéed yellow onion -White rice
Garlic and Herb
This is a staple for us. We add this herb combo to oil and vinegar to make dressings and marinades and we use it dry to season just about anything we're barbecuing or sautéing: -Italian herb blend -Garlic powder -Onion powder -Salt
Barbecue
If "make it taste like a taco" isn't your thing, surely "make it taste like it belongs on a barbecue" must be. Our everyday-on-anything-barbecue basic: -About equal parts brown sugar and chili powder -Cumin to taste -Garlic powder to taste -Onion powder to taste -Salt to taste (Check out this link to see how we turn this into a marinade)
